Supported Allergens

FDA Big 9 (Always Available)

These allergens account for 90% of food allergies in the United States:

  1. Milk - Dairy products, casein, whey
  2. Eggs - Whole eggs, egg whites, egg yolks
  3. Fish - Salmon, tuna, cod, etc.
  4. Shellfish - Shrimp, crab, lobster, etc.
  5. Tree Nuts - Almonds, walnuts, cashews, etc.
  6. Peanuts - Peanuts, peanut oil, peanut butter
  7. Wheat - Wheat flour, bread, pasta
  8. Soybeans - Soy sauce, tofu, edamame
  9. Sesame - Sesame seeds, tahini, sesame oil

Additional Allergens

Configure these in Allergens > Settings:

  • Gluten - Found in wheat, barley, rye
  • Mustard - Mustard seeds, prepared mustard
  • Celery - Celery stalks, celery salt
  • Lupin - Lupin flour, lupin seeds
  • Mollusks - Oysters, clams, mussels
  • Sulfites - Wine, dried fruits, preservatives
  • Alcohol - Beer, wine, spirits

Core Concepts

The Tri-State Model

Every allergen on every item has one of three states:

This model ensures diners know exactly what’s verified and what isn’t.

Derived Allergens

When items contain other items (combos, variants), allergens propagate:

  • A combo contains an allergen if any component contains it
  • A variant parent contains allergens from all variant options
  • Changes to ingredient allergens update all items using that ingredient

Atlee helps you verify allergen accuracy:

  • Verification Queue - Review items needing allergen attention
  • Community Flags - See corrections submitted by diners
  • Insights Dashboard - Track allergen coverage across your menu

Quick Start

1. Configure Allergens

Navigate to Allergens > Settings and enable the allergens relevant to your menu.

2. Add Ingredients

For each menu item, add a complete ingredient list. This enables automatic allergen suggestions.

3. Mark Allergens

Review each item and set allergen status:

  • Mark Contains for items with the allergen
  • Mark Safe for verified allergen-free items
  • Leave Unconfirmed if you’re unsure

4. Review the Queue

Navigate to Allergens > Verification to see items needing attention.

5. Monitor Insights

Check Allergens > Insights for coverage statistics and gaps.

  1. Verify with suppliers - Confirm ingredient allergens with your vendors
  2. Document cross-contamination - Note shared cooking equipment
  3. Train your staff - Ensure kitchen knows allergen procedures
  4. Review regularly - Quarterly allergen audits catch changes
